Resa per ettaro: 100 q/h - Harvest: Harvest carried out during the nights of the first days of August.
- Winemaking: After a very soft pressing of the grapes, fermentation takes place in 15 days at a temperature of 13°C.
- Refinement: The wine then matures in steel tanks for 3 months. Bottle aging: at least 1 month.
- Tasting notes: Bright straw yellow in color, Selene offers pleasant aromas of tropical fruit such as yellow melon and ripe pineapple on the nose, along with aromatic hints of dill and rosemary. On the palate, it has a marked acidity, a light body and a pleasant minerality, along with notes of apricot and orange peel.
- Pairings: It goes very well with baked fish, stuffed calamari and seafood sauces with little or no tomato. It is also an excellent choice when paired with fatty, tasty meats or medium-aged sheep's cheeses.
- How to serve it: It expresses its best qualities in medium-sized tulip glasses served at a temperature of 8-10°C.
