Who said there are no good pizzas in the street food capital? Follow me, because we will take you to a pizzeria in the heart of the historic center of Palermo.
Assud a Sanatamarina is located in via Celso, 50m from the central via Maqueda, inside the historic Galletti di Santamarina Building.
A pizzeria with a Sicilian connotation with an eye to the tradition and excellence of local products.
The menu is particular, from street food appetizers to classic pizzas and seasonal ones that stand out for their period ingredients. There is no shortage of wines, with a wide local variety displayed along the walls.
What catches our attention is the display on the table which invites us not to leave the pizza crust (it's a crime!), but which could be a reason to accompany it with excellent sauces that can be ordered.
Don't miss tasting ours panelle made with chickpea flour, and potato croquettes o piĆ¹ comunemente chiamate “cazzilli”.
We opted for a Malarazza pizza with mozzarella, Ragusa donkey mortadella and apulian burrata on the way out.
The second pizza is a Sicilian Four Cheeses: mozzarella, aged pecorino, sheep tuma chees, ragusano caciocavallo. Even better if accompanied by spicy oil.
The dough is natural based on Sicilian grain flours, long leavening. And you can also notice it from the structure of the cornice, which is very soft. Woe to leave him!
To be accompanied with a good red wine, for an evening away from the noise or inflated clubs of dubious quality.
Via del Celso is right in the center, and therefore an opportunity for a walk among the historic buildings of old Palermo.
All that remains is to wish you bon appetit!
